New Years and Mitsuda's family Ozoni!



 New Years is always a smorgasbord of food. Especially in Hawaii.

 Dad's steamed Tai snapper with lopchong stuffed in the belly.

Octopus braised in beer - Braise with one can of beer and add water until octopus is completely covered. Cook until tender. 1 -2 hours. 

Miso sauce - miso, sugar, lemon juice water. Sorry! no measurements, to taste! 



 
Kinako Mochi

- Powder mixture is 50 sugar 50 kinako powder - Dad's preference
- Mine- 40 percent sugar 60 percent kinako
- Add kinako mixture on bottom of bowl
-Poach mochi in slightly simmering water 
-Place mochi on top 
- Generously add kinako mixture




Mitsuda Family Ozoni ingredients

1. Gobo

 2. Hasu


 3. Konbu knots





 4. Canned whole mushrooms
 5. Daikon
 6. Mizuna
 7. Carrots
 8. Takenoko

Fresh
 We use canned for the soup

 9. Konyaku








Boil all vegetables separately in slightly salted water. Please use sea salt. 
* Boil Gobo and hasu separately and discard water because the vegetable broth is used for your soup stock. 



Next, is the buri. Sprinkle with sea salt if not salted and let it marinate for at least several hours before poaching in water. (Poaching means cooking it in barely simmering water. DO NOT BOIL THIS FISH.
 

Once salted cut into pieces


Also, poach mochi in very gentle simmering water. DO NOT BOIL! Your mochi will obliterate.


 Combine in a nice lacquered bowl
